
Going gluten-free: the first step
One of the signature food categories of the Western diet is carbohydrates. We Westerners, whether in Iowa or Italy, Florida or France, love our carbs. The Italians love their pasta; the Austrians their pastries; the Belgians their waffles; and the Americans love their sandwich breads, their pizzas, and, for that matter, all of the above. I love these carb items as well. But recently we as a society have become more conscious of our food intake and dietary tendencies – coinciding with the peaking of our vast overweight population – and this includes our consumption of gluten, the protein found in wheat products.
The awareness of Celiac’s Disease, which includes a strong allergy to gluten, has grown by leaps and bounds through the 2000s and into the 2010s. Not only that, but many people are identifying in themselves and their children, varying degrees of intolerance to gluten/wheat. In other words, many of us don’t necessarily have full-blown cases of Celiac’s, but we recognize that gluten-based products can have an adverse effect on our digestion, especially when consumed in large quantities.
The good news is that with the growth of our awareness of Celiac’s specifically and gluten intolerance generally, a number of recipe books and products have become available to help give us healthier alternatives. Take virtually every wheat flour-based product, and you can now find a gluten-free alternative to it (croissants, amongs other baked goods, may be an exception). One carb-based traditional breakfast food has been well-served in this area, and that’s the pancake.
Pancakes, as we all know (or should know), taste best when they’re made from a recipe, or at least a mix, as opposed to bought pre-made and frozen and then heated up. There are at least a dozen brands that have weighed in with their version of the gluten-free pancake, and some of them are equivalent to a healthy pancake recipe, with no added sugars. If you’re going to continue indulging in the American ritual of weekend morning pancakes, doing it gluten-free is a healthier contemporary take on it. And even if you don’t have gluten intolerance, I believe eating gluten-free pancakes is a healthier way to go, and with many recipes or mixes, you won’t miss a thing when it comes to taste.
